Invertase Brewing Company is a family-owned brewery launched in October 2019, run by a husband-and-wife pair who are a microbiologist and a biochemist and their son, a mechanical engineer who serves as head brewer [1]. True to its science-minded name, every batch passes a lab-backed quality program of sterile wort tests, plating for wild yeast and bacteria, and sensory panels, across a range spanning fruit-forward IPAs, barrel-aged stouts, and traditional styles [1].
